We’ve been so busy this week, that I really hadn’t paid that much attention to my ever shrinking veggie supply in the refrigerator. When dinner rolled around yesterday evening I realized my options were limited; I had salad fixings, asparagus, a couple of lemons and a few onions.
How boring.
So, I decided to see how creative I could be.
{This are the moments my children become very afraid.}
My solution was a stir fry of sorts, and it wasn’t bad at all.
Ingredients:
3-4 pounds boneless chicken breast tenders
freshly ground pepper
ground dry mustard
3 Tablespoons Olive Oil
Green Onions, the entire onion, thinly sliced
2 Tablespoons fresh ginger, grated
1 Tablespoon lemon zest
3 cloves garlic
1 pound fresh asparagus, sliced into 1-inch pieces
3/4 cup low-sodium chicken broth
2 Tablespoons Bragg’s Liquid Aminos*** ( natural soy sauce alternative & much lower sodium option)

Let’s Make it!
**Stir Fry the chicken breast tenders in heated olive oil on medium-high heat, seasoning the chicken with the fresh ground pepper & dry mustard. When cooked through, transfer to a plate and drain.
**Reduce the heat to medium, & in your pan, add the green onions and garlic, sautéing until fragrant (about 1 minute). Add the lemon zest and ginger mixing together and cooking about half a minute. Add the broth & soy sauce alternative and bring to a simmer. Scrap the bits and pieces of chicken from the bottom of the pan. Add the asparagus and simmer 1 1/2 minutes so that it is still crisp, but tender.
**Add the chicken back to the pan, reduce heat to medium-low and simmer a minute or so to heat the chicken through.

***You can use soy sauce, but if you choose to use the Bragg’s Liquid aminos, it can be found at Fresh Market & Ingles grocery stores.
Most any store that carries a lot of organics should have this. I found it in the aisle with Asian Foods, but it can also be found in the organic condiment section.

Serve with rice and a salad.
That’s it. Simple and fairly fast; I had supper completely on the table (well we ate in the living room because my kitchen table was covered in glitter from a homecoming banner) in 40 minutes!
And, it was delicious!
Either that or my kids hid their plates …. there wasn’t even a grain of rice left!
Now I am headed to the grocery store so that we can have something fresh to accompany our London Broil for supper tonight!
